Spinach Parmesan Scrambled Eggs

Ingredients
4 egg whites1 large egg1 tsp paprikapepper, to taste1 tsp olive oil2 cups baby spinach1 TBS shredded Parmesancrushed red pepper flakes
Directions
Whisk the eggs together, add the paprika and pepper, and set aside.
Heat the olive oil in a nonstick skillet over medium heat. Add the baby spinach and cook, tossing, until wilted, about 1 minute. Add eggs. Cook, stirring occasionally until just set, about 1 minute and turn off the heat. Stir in Parmesan. Sprinkle with red pepper flakes and serve.
