Jen's Easy Black Bean and Chicken Tostadas

Ingredients
3/4 pound chicken breast - diced1 can diced tomatoes (15oz)1 can black beans (15 oz)1 packet taco seasoning mix1/3 cup water1 cup shredded cheese - I like using chihuaua but will use a blend of that and cheddar if I don't have enough of one kind on hand10 corn tostada shellsoptional toppings (not in calorie count):avocadodiced tomatoessalsasour cream
Directions
Preheat oven to 350. Saute the chicken (I use a non-stick pan and no oil) until cooked through. Drain and rinse black beans. When you are sure the chicken is cooked through, add the black beans, tomatoes, water and taco seasoning mix. Simmer for flavors to combine - about 15 minutes. Using a slotted spoon, put equal amounts of the mixture onto 10 tostadas on a cookie sheet. Sprinkle with shredded cheese. Bake for 7-10 minutes until tostadas are crispy and cheese is melted.
