low calorie versiion of Diane Motts crustless quiche

Ingredients
4 oz smart balance spread1/2 C flour1 1/2 C milk9 eggs, beaten11 oz light cream cheese2 C low fat cottage1 tsp. mustard1 tsp baking powder1 tsp salt1 C mozzarella cheese1 C shredded cheddar cheese1/4 C parmesan cheese
Directions
preheat oven to 350*. Melt spread in saucepan, add flour. Stir just until bubbles. Slowly add the milk stirring constantly until thickens. Let Cool. Stir B Powder, salt and mustard into cottage cheese.Beat eggs well then beat in softened cream cheese and cottage cheese mixture.Slowly beat in cream sauce, then thoroughly incorporate cheeses. Pour into 2 10 inch pie pans sprayed with Pam. Bake @ 45 mins. until puffed and brown. Cut each quiche into 8 pieces.
