CarrotsLeeksMushroomsEdemameMarinated TofuCoconut milkThai rice noodles2 big tbl yellow currycoconut oilCrushed peanuts (optional)Stir the yellow curry into 1-2 tbl of coconut oil or peanut oil.slowly add the coconut milk. Add other ingredients/vegatables based on how long they take to cook (e.g. the leeks and edemame before the mushrooms)Cook rice noodles by soaking 10 minutes in boiled water.Add drained noodles into curry and toss. sprinkle with crushed peanuts on each serving if desired.all the ingedients
