Cinnamon-Orange Basmati Rice Pudding

Ingredients
1 cup dry basmati rice2 14-oz cans light coconut milk2 cups milk1 cup granulated sugar2 Tbsp butter2 Tbsp orange zest (about 3 medium oranges)Juice of 1 orange1/2 tsp salt (optional) 1/2 tsp ground cinnamon
Directions
Combine rice, coconut milk, milk, sugar, and butter in sauce pot.
Bring to a boil and stir well.
Lower heat to a simmer, and simmer approximately 30 minutes.
Stir mixture while simmering every 3-4 minutes.
Rice will plump and sauce will thicken.
When mixture has come together to thick pudding. Mix in salt, cinnamon, orange zest, and orange juice.
Serve hot or cold* and garnish with orange segments, ground cinnamon or whipped cream.

* If serving cold, cover and refrigerate for a few hours or overnight.

    i was SO excited to read this. love rice pudding, and those marvelous flavors and coconut milk all spelled 'amazing treat' to me.
    but then when i got to the serving size i realized it was bait and switch.
    a quarter cup of rice pudding is a scant three mouthfuls.

With white rice and sugar, this isn't something anyone who is trying to live a healthy lifestyle should be eating regularly. - 5/16/14

    It was very good, a nice change of taste. We only have non-fat milk and used a different sweetener, but very nice and I'll make again. My serving sizes are larger. Happy to save calories elsewhere in exchange for a nice treat. - 4/4/14

    This recipe is so delicious, it is one of my favorites and my family also loves it! The only problem is that the portion size is very small. I will definitely change out items in the recipe so I can bring it up to a 1/2 cup portion - 4/4/14

    As soon as I saw "8 servings" I knew it was not a good candidate. How many of us cook for 8? Then I looked at the nutritional info--230 calories for 1/2 cup and loaded with sugar. Much better, and easier, to have frozen yogurt or light ice cream. - 7/7/14

    Serving size is listed as 1/2 cup...not sure why so many think its 1/4 cup! I would certainly leave some of the sugar out though. Bu the idea of coconut, orange and cinnamon together sounds like well worth the calories...for special occasion dessert. We just don't "do" dessert regularly anyway! - 5/23/14

    Very confusing sine the video talks about another recipe.
    I made it and it was way too sweet AND I had already halved the sugar.

    I haven't tried this but looking at the calories - 230.5 for only 1/2 cup?!! Yikes!! If you have the juice of 1 orange, do you actually need any sugar at all?

    If it took you three oranges to get 2tbsp of orange zest, you really need to think about how you're zesting your oranges. It took one orange to get well over two tablespoons of zest and I get the added bonus of not wasting two oranges. Overall, good, if you alter the recipe to your tastes... - 5/18/14
