Almond Butter Protein Cups

2 scoops Vanilla Protein Powder2 Tablespoons Almond Butter3 oz So Delicious unsweetened Coconut Milk96 (90g) Ghirardelli 60% Cacao Bittersweet Chocolate Chips1 teaspoon Coconut Oil
Melt Chocolate chips, then add coconut oil and stir until smooth. Place about 1 1/2 teaspoons into each cupcake liner in a cupcake pan and put in freezer while making the filling.
Blend together protein powder, almond butter and coconut milk in a food processor until a smooth paste. Evenly divide proein mixture between the four cups. Pour about 2 teaspoons melted chocolate over each one.
Pop them in the freezer until cold. Decorate tops with sliced almonds before placing in freezer if desired. Leave them in freezer until chocolate hardens. Store in refrigerator.
