Shrimp & Couscous Salad

Ingredients
2 C Cooked Couscous - chilled1/4 C chopped Red Onion1/4 C chopped Green Bell Pepper1/4 C shopped Red Bell Pepper10 Green Olives -sliced4 TBS Daisy Light Sour Cream (40 cal. per 2 TBS)2.65 OZ Plain Greek Yogurt (1/2 of a 5.3oz cup)1 clove minced garlic4 C Romain lettuce 6 oz Shrimp, cooked and peeled
Directions
Fluff couscous and add onion, peppers and olives. Wisk together sour cream, yogurt and garlic. fold into couscous mix. Let stand a few minutes to flavor through. Arrange 2 Cups Romaine lettuce on each plate. Top with couscous mix then shrimp. Serve with Lemon wedges.
