Hi fiber carrot pancakes

Ingredients
1 1/4 Cup King Arthur Flour1/4 cup chopped walnuts2 tsp baking powder1 tsp cinnamon1 egg1/3 cup splenda1 cup milk1 cup chopped carrots4 tblsp flax seeds1 tsp vanilla.
Directions
Chop walnuts and carrots. Set aside.
In a large bowl mix flour,nuts, baking powder and cinnamon. Set aside.
In a separate bowl mix egg,splenda,milk ,carrots,flax seeds, and vanilla. gently stir the carrot mixture into the flour mixture unti the flour is moistened.
drop by1/4 cupfuls onto hot griddle.
gently spread on griggle with back of spoon.
Turn when edges are firm. rmove when second side is golden brown.
Makes 12- 14 pancakes.
