Shrimp quiche

Ingredients
1 9" Pillsbury pie crust4 eggs1.5 cups almond milk (unsweetened)1 pat butter1 cup chopped onion2 cups chopped spinach6 oz shrimp, choppedsalt & pepper to tastepinch of nutmeg1/4 cup low fat cheddar1/4 cup shredded parmesan
Directions
Put prepared pie crust in quiche pan. In large saute pan, melt butter. Saute onions until soft. Add spinach, cover & cook until wilted. Remove from pan. Add shrimp to pan & saute until cooked. Spread vegetables & shrimp on pie crust. Sprinkle with cheeses. Meanwhile, combine beaten eggs & almond milk, pour over cheese & vegetables in crust. Bake 45 minutes at 350.
