Roast veg fritatta

Ingredients
cauliflower (2 cups)broccoli (1 cup)zucchini (1.5 small)6 eggsfeta cheeseblue menu canola oil cooking spray
Directions
roast veg on parchment paper in oven until softened (spray first with cooking spray)
spray bottom of a glass baking dish
once roasted, layer veg in dish
scramble eggs (add dried herbs if wanted) and pour egg over veg
bake in oven until egg is set (roughly 20-30 mins)
