Vegan Italian Pasta Salad

Ingredients
8 oz (uncooked) whole wheat spiral pasta1 1/2 tbsp balsamic vinegar1 tbsp vegetable broth or pasta cooking water1/2 tsp dried oregano 1 cup cherry tomatoes, halved 1/2 cup basil, fresh, chopped 1/2 cup fresh baby spinach leaves, washed1/4 tsp table salt, or to taste 1/4 tsp black pepper
Directions
Cook pasta about 8 minutes, unil al dente.
Drain and transfer to a large bowl.
Add vinegar, broth and oregano; toss to coat.
Fold in tomatoes, basil and spinach.
Season to taste with salt and pepper.
Serve room temperature, or chilled if desired.
