Egg and Spinach Quiche

9 Eggs (beaten)5 slices FF Cheddar or American Cheese (parted)2c. Frozen or fresh spinach
Preheat oven to 350
Beat Eggs. Tear cheese apart and add to egg
Thaw spinach and add to cheese/egg mixture.
Spray muffin pan. Fill 9 muffin pans with mixture.
Put in oven for 25 minutes or until fork comes out clean.
Note: freeze unused portion for future breakfasts!
