Ingredients
1 lb scallops1/4 tsp salt1/4 tsp pepper3 tbsp. olive oil2 garlic cloves minced1/2 c white wine3 tbsp. chopped parsley2 tbsp. lemon juice2 tbsp. butter2 tbsp. capers10 oz baby spinach
Directions
pat dry scallops & season with salt & pepper. Heat 1.5 tbsp. oil in heavy saucepan. sear scallops 2 min each side, remove. add remaining oil & garlic, sauté 1 min. Add wine & deglaze, cook til reduced by 1/2. add remaining ingredients except spinach and heat. remove sauce to bowl. Saute baby spinach until wilted.
