2 Really Ripe Bananas, mashed4 Large Eggs1 t Vanilla1 t Cinnamon1 t Baking Soda6 tbsp Coconut Flour (Bob's is available in most grocery health food sections...pricy but you don't use much and it ads great flavour with no gluten)Combine bananas, cinnamon, vanilla and mash then mix until liquidy (I use a fork then a whisk)Beat the eggs until frothyAdd eggs to banana mix and whisk to mix wellAdd coconut flour and whisk wellAdd baking soda and whisk wellDrop into hot frying pan, 4 medium cakes at a time and allow to cook 3-4 min per side. 6 pancakes leave you with an "I ate too much" feeling, 4 is a nice filling breakfast
Fry in a good non-stick pan sprayed with cooking spray
Use medium to medium low heat...best to cook these slowly to avoid burning and uncooked middles.
