1 tablespoon of oil5 either hot or sweet Big Y sausage links1 cup of red bell peppers1 cup of sliced yellow onion1 teaspoon of kosher salt1 teaspoon of freshly ground pepper1/2 teaspoon of dried oregano1/2 teaspoon of dried basil4 chopped garlic cloves2 tablespoon of tomato paste1 cup of marsala wine1 15 ounce can of fire roasted tomatoes1/4 teaspoon of red pepper flakes
cook sausage in oil till brown about seven minutes. drain sausages. in same pan , add the peppers onions salt and pepper and cook till golden brown about 5 minutes. Add tomato past and stir. Add marsala wine, tomatoes and chili flakes. Stir to combine scraping bottom of pan to get brown bits up.
Bring to a simmer and cook until the sauce has thickened. Can eat in a bowl as is or hollow out a roll and scoops some in eating immediately. ( bread not counted in calorie count
