Chicken Veggie Roll w/ rice paper

Ingredients
Cabbage - one cupCarrots, raw, 30 strip, thinCilantro, raw, 3 tbspChinese Noodles, cellophane or long rice (mung beans), 2 cup Chicken Breast, no skin, 0.5 breast, bone and skin removedPeanuts, dry-roasted, 1 cupRice Paper, 16 serving*Extra Light Olive Oil, 3 tbsp Pepper, red or cayenne, 2 tbsp
Directions
cook chicken and cool - shred into thin strips
mix all ingredients in large bowl, except peanuts, oil and hot pepper

prep rice paper as instructed, add amount to each paper and wrap like burrito

for dipping sauce - crush peanuts, add oil and red pepper, mix and serve
