Easy Zucchini Parmesan

Ingredients
1 cup sliced zucchini 1 tablespoon shredded Parmesan cheese10 squirts butter spray
Directions
Line a cookie sheet with aluminum foil, then coat with some cooking spray. Place the zucchini slices out on the pan, then spritz with them with the butter spray. Sprinkle on the parmesan cheese and then pop it in the oven. Broil for a few minutes - until the cheese starts to brown. Enjoy it while it's warm!

Make a larger batch for a delicious and healthy side dish for any meal! Your family will love it!

    I really love this recipe and have been making it all season. I do skip the cheese, use a little olive oil, and salt/pepper instead and make sure that I cut thick slices. I'm not joking when I say that this is my new substitute for potato chips! - 8/25/08

    This was good, but I pour season diced tomatoes over the zucchini and then Sprinkle on Parmesan Cheese. about 25 more calories. I do it with spaghetti squash too,its awesome dinner with whole wheat garlic bread - 6/22/09

    Its wonderful! I have always enjoyed zucchini this way. *Calorie reducing tip* I learned from a friend though is use the butter flavored cooking spray instead of oil or actual butter. It has all the taste of butter and ABSOLUTELY NO CALORIES or fat :D Great on popcorn or veggies too. - 1/18/09

    This was very tasty and easy! I also used the olive oil spray and sprinkled slices with Greek seasoning before adding the cheese. I baked the zucchini slices a bit before broiling, and they weren't as mushy. I served the slices with a side of no-sugar-added marinara sauce for dipping. Yum! - 5/8/09

    this is a very tasty dish. i like to add a dash of garlic salt and pepper and some crushed red pepper flakes for some heat. i aso use shredded as opposed to grated cheese to add some texture. you can also do this with eggplant and it comes out really nicely. - 5/6/09
