Pho Vietnamese Beef Soup

Ingredients
1 Cn beef consomme1 cn beef broth3 C water2 T soy sauce2 T ginger root, finely chopped1 Cinnamon stick4 oz rice vermicelli2 carrots, peeled and thinly sliced6 oz. sirloin or other beef, thinly sliced1/4 red onion, choppedFresh cilantro or parsley, choppedFresh basil, chopped
Directions
Put soups, water, soy sauce, ginger and cinnamon stick in large pot. Bring to boil and simmer 20 minutes.
Meanwhile soak vermicelli in hot water.
Remove cinnamon stick from soup.
Drain vermicelli.
Add carrots and vermicelli to soup pot. Simmer 3 minutes.
Add beef and bean sprouts to pot. Cook 1 to 2 minutes.
Spoon into bowls. Top with onion, basil and cilantro.
Serve piping hot.
