Curried Carrot Soup

2 T. olive oil1 medium onion, chopped2 lb carrots, peeled and cut into large pieces4 c. chicken broth prepared with reduced sodium bouillon cubes1 1/2 T. curry powder1/2 t. ground red pepper
Heat oil in large saucepan. Add onion and carrots, saute for about 5 minutes. Add broth, curry powder and ground red pepper, simmer for about 15 minutes, or until carrots are very tender. Blend in separate batches in a blender.
If desired, top with Greek yogurt or sour cream and chives (not included in nutritional information).
