Pork Chops with Black Beans and Quinoa

1 tbsp. canola oil1 medium onion sliced2 red bell peppers sliced2 cloves garlic minced1/2 tsp chili powder1 tsp cumin seed1/3 cup quinoa (dry)2/3 cup water1 tbsp. vegeta2 cups black beans1/2 cup salsa1/2 cup applesauce3 centre cut pork chops (no bone), cut in half
Cook onion, peppers and garlic in oil until soft. Add spices, quinoa, black beans, salsa, applesauce, and water and cook together until quinoa is softened.
In the meantime, broil pork chops under grill.
Set oven to 375, place chops in a glass casserole and pour black bean mixture over the chops and cook covered for 30 minutes.
