Mango and Tomato Salsa

Ingredients
2 tsp olive oil1 med yellow onion3 Roma Tomatoes, diced1 ripe Mango1/4 cup cilantro, chopped1/2 tsp cuminsquirt of lime juicesalt & pepper to taste
Directions
1. cut onion into slices, brush with olive oil and grill on high on an outside grill until soft, or alternatively you can dice the onion and sautee it on the stove with the olive oil.
2. Dice tomatoes, mango, and softened onion into small pieces
3. Once onions are soft, toss together all the ingredients in a bowl and serve on tacos.
