Creamy Chicken & Mushroom Sauce

Ingredients
2 tbsp Extra Virgin Olive Oil 1.5 cup Onions, raw, chopped 1 oz package dried Oyster Mushrooms, reconstituted2 cups of cooked & deboned skinless chicken thighs1/2 cup Whole MilkBlack Pepper, White Pepper & Herbes de Provence to taste (about 1 tsp each)
Directions
Cover dried mushrooms in water and soak for at least 20 minutes until reconstituted.
Saute onions in EVOO over medium heat.
Drain mushrooms & reserve water.
Add reconstituted mushrooms, pre-cooked chicken, spices, milk.
Cook over medium heat.
Add some reserved water from mushrooms to maintain moisture as you cook.
