1 (8-inch) Whole Wheat Fajita Style tortilla1 (6-6 ˝ oz.) can solid white tuna in water, drained1 tablespoon mayo with olive oil1 teaspoon finely chopped celery1 teaspoon chopped onion1 teaspoon chopped tomato1 to 2 teaspoons jalapeno pepper, chopped or to tasteSea salt and pepper1 ounce shredded cheeseSalsa, red or green
1. Set oven rack 4 inches from broiler and preheat. Line a rimmed baking sheet with foil.
2. Place the tortilla on the foil.
3. Combine tuna, mayo, celery, onion, chopped tomato and chopped jalapeno peppers.
4. Salt and pepper to taste.
5. Spread tuna mixture evenly over the tortilla and sprinkle with cheese.
6. Place in the oven and broil until cheese is bubbling, 1 to 2 minutes.
7. Serve immediately with salsa.
