Low Carb Nanaimo Bars

Ingredients
Bottom Layer½ cup unsalted butter. melted¼ cup granular sweetener (or sweetener to equal 1/4 cup)5 tbsp. cocoa1 egg beaten1 3/4 cups almond meal1 cup coconutSecond Layer½ cup unsalted butter3 tbsp cream2 Tbsp. vanilla custard powder1 cup powdered sweetener (powdered in a nut or coffee grinder. measure before grinding)Third Layer4 oz NSA chocolate chips (I used Lily's)2 Tbsp. unsalted butter
Directions
Bottom Layer.
Combine and press firmly into an ungreased 8" x 8" pan. Bake at 350 degrees for 8 minutes. Allow to cool completely.

Second Layer
Cream butter, cream, custard powder, and powdered sugar together well. Beat until light. Spread over bottom layer.

Third Layer
Melt chocolate and butter over low heat. Cool. Once cool, but still liquid, pour over second layer and chill in refrigerator.
