Turkey-Vegetable Crockpot Soup

32 oz. Vegetable Broth, Organic, Trader Joe's35 oz. Dark Turkey pieces, bone in1 Tbs. Olive Oil16 oz. Onions, chopped15 oz. Carrots, chopped21 oz. Sweet Potato, cubed1 tsp. Salt
In a large saucepan, brown the turkey pieces, then the vegetables, in olive oil. Add a little water to the pan if the any of the ingredients start to burn and stick to the pan. Add turkey, vegetables, and salt to the vegetable broth in a crock pot.
Cook on low for 8 hours, or for 4 hours on high.
At the end of the cooking time, remove the turkey pieces to a chopping board, remove the meat from the bones, chop the meat, and add back to the soup.
A serving of 1 cup is satisfying and filling.
