Fantasy Jasmine Rice

Ingredients
2 tbs. canola oil4 scallions minced1 cup grated carrot1 tsp fresh/minced ginger¼ tsp red pepper flakes2 cups water2 tbs. tamari1.5 cups jasmine rice1 cup frozen baby peas thawed¼ cup firmly packed Thai basil (or regular)2 tbs. roasted cashews2 tbs. shredded coconut toasted
Directions
1) Heat oil in pan on medium heat
2) Add scallions and carrots for about 2 minutes or until soft
3) Add ginger and red pepper flakes
4) Add water and tamari until begins to boil
5) Add rice (for about 15 minutes)
6) Add peas and basil about 2 minutes before rice is finished
7) Toast coconut and add with cashews on top
