1.5 cups unsweetened vanilla almond milk3 Tbl egg beaters (liquid egg substitute)1/2 cup plain non fat Greek yogurt1/2 cup unsweetened apple sauce2 Tbl frozen apple juice concentrate3 cups oats2 tsp cinnamon2 cups mixed berries
Spray a glass 8 x 8 baking dish with non-stick cooking spray. In a bowl combine almond milk, egg beaters, yogurt, applesauce, frozen concentrate apple juice, vanilla, oats, and cinnamon (all ingredients except berries). Spreadbhalf of the oat mix in the baking dish. Layer berries on top of oats evenly across the dish. Top with remaining oat mix and bake for 30 minutes in a preheated 350 degree oven. Cut into 6 squares, top with fresh fruit or milk if desired.
