Gazpacho

8 roma tomatoes, cut in half1/4 cup olive oil1/2-3/4 cup balsamic vinegar2 tbsp tomato paste1 tbsp taco sauce2 cans tomato juice3 green onions, sliced in small rounds1/2 cucumber peeled and diced2 med to large tomatoes, diced1/2 large red bell pepper or 4 mini red peppers, diced3 tbsp cilantro
In large bowl combine chopped green onions, red pepper, cucumber and the two large diced tomatoes.
In food processor process tomatoes, olive oil and balsamic vinegar until smooth. Add tomato paste, taco sauce and salt/pepper to taste. Remove from processor and pour into large bowl with the diced veggies. Add two cans of tomato juice. Taste for seasoning and add additional balsalmic, salt and/or pepper as needed. Chill for about an hour.
