honey wheat banana muffins

Ingredients
1-1/2 cups whole wheat flour½ cup honey1-1/4 teaspoons baking powder1/2 teaspoon baking soda1 teaspoon ground cinnamon2 egg whites1 cup banana, mashed1/4 cup applesauce
Directions
Preheat oven to 350-degrees. Lightly grease a 6 cup muffin pan. In a large bowl, stir together flour, baking powder, baking soda and cinnamon. Add egg whites,honey, bananas and applesauce; stir just until combined. Pour batter into prepared pan.
Bake in preheated oven for 30 to 40 minutes, until a toothpick inserted into center of a muffin comes out clean. Turn out onto wire rack and allow to cool

    I only had one banana when I made this recipe but even so, it's still a tasty recipe. I can really taste the cinnamon and honey. I found that there was enough batter for 9 muffins rather than 6. I have a standard size muffin pan though. - 6/22/08
