Veggie Fritata

Ingredients
6 large eggs6 egg whites1 cup shredded cheddar cheese1 tbls butter1 bunch asparagus1 cup sliced cherry tomatoes6 oz sliced baby bella mushrooms2.5 tbls EVOO
Directions
roast veggies with olive oil (chop aspargus into 1 inch pieces) and set aside to cool.

Beat eggs and mix all ingredients.

Heat oven to 400 - place casserole dish in the oven with the butter only...once the butter melts pour in egg mixture. Cook for about 40 mins until center is set.
