Ingredients
1 large Eggplant, fresh sliced*Summer Squash, 1 medium slicedFrozen Onion and Pepper Mix, 1 cup 2 tablespoon minced garlic2 cans of stewed tomatoes1 tablespoon fat free parmesan cheese
Directions
Saute onions and peppers - add minced garlic. Add squash and eggplant - season to taste - cook until desired softness. Sprinkle with cheese - serve hot
