Big Breakfast Diet - Vegetable Stew

Ingredients
4 cups vegetable broth3 cups water5 large tomatoes chopped, or 1 x 14.5oz can diced tomatoes3 bell peppers, any colour, seeded and chopped2 medium-sized zucchini, chopped2 cups chopped green or red cabbage2 cups broccoli or cauliflower florets (or 1 cup of each)1 medium-size eggplant, chopped1 cup chopped onion1/2 pound mushrooms, any variety, trimmed and chopped1 cup string(French) beans, cut in half crosswise1 cup chopped carrots1 can (14oz) artichoke hearts packed in water, drained and quartered1.5 tsp dried oregano1 handful fresh basil and parsley leaves, or 1 tsp each of dried1-3 whole cloves of garlic, peeled (qty as per your preference)Salt and freshly ground black pepper to tasteCrushed red pepper flakes to taste
Directions
1) Place ALL ingredients in a crock-pot and stir well.
2) Season mixture with the salt, black pepper and red pepper flakes to taste.
3) Cook the stew on low heat until the flavours develop(7-9 hours).
4) Before serving, taste the stew for seasoning and add more salt and/or black pepper if required.
