GF Apple Cinnamon Muffins

Ingredients
1 ½ cups rice flour ¾ cup sugar1 cup corn meal 1 ¼ cups milk4 tsp. baking powder 1 tbsp. vinegar1 ½ tsp. cinnamon 2 eggs1 egg yolk½ tsp. salt ½ cup butter 1 apple, chopped fine Raw sugar for sprinkling tops
Directions
Preheat oven to 400° and prepare muffin pan. Combine all dry ingredients in a medium bowl, set aside. Stir milk and vinegar together; set aside to let sour for 3-5 minutes. In a large bowl or stand mixer, beat butter and sugar until creamy. Add eggs, yolk, vanilla and soured milk; beat until smooth, then fold in apple
