Vegetable Quiche cups

Ingredients
chopped spinachdiced onionsdiced green pepperseggslow fat cheese
Directions
Precook spinach and squeeze out excess liquid. Line 12 cup muffin tin with foil baking cups. Spray cups with cooking spray. Combine egg, cheese, peppers, onions, and spinach in a bowl. Mix and pour evenly into cups. Bake at 350 F for 20 minutes or till a knife put into the centre comes out clean. Can be frozen and reheated in microwave.
