Ingredients
8 oz noodles1lb shrimp, fresh or frozen2 tbsp cream cheese (can use reduced fat)1c low sodium broth5 oz frozen spinach, thawed and moisture removed3/4c parmesan cheese, grated2 cloves garlicpepper to taste
Directions
1. cook noodles according to directions-do not salt water.
2. heat large skillet medium to high heat.
3. melt cream cheese with broth about 3-4 minutes until mixture is blended well.
4. add parmesan, garlic. Add pepper to taste
5. add shrimp and stir until cooked through, then add spinach and stir well. Heating all thoroughly.
Serve over noodles.
