Bess and Katie's Chicken Stir Fry

Ingredients
*Brown Rice, long grain, 2 cup * Peppers, sweet, red, raw, sliced, .5 cup * Shallots, 3 tbsp chopped *Soy Sauce, 2 tbsp * Curry powder, .5 tsp * Basil, .5 tsp * Ginger, ground, .5 tsp * Chicken Breast, no skin, 1 breast, bone and skin removed
Directions
Cook rice as directed.
Cut chicken into bite-sized pieces. Mix with herbs and soy sauce and saute in a large non-stick frying pan until browned.
Chop shallots finely. Cut peppers into bite-sized pieces. Add shallots and peppers to pan with chicken and saute for another five minutes.
Serve hot. Makes 2 servings of a little over a cup.
