Pepper Steak with Potatoes

Ingredients
4 medium red potatoes, cut into 1/4" slices1/2 cup water1 lb lean top sirloin steak, thinly sliced1 garlic clove, minced2 tsp olive oil1 medium green bell pepper, sliced1 small onion, chopped1 Tbsp + 1 tsp cornstarch1 cup low sodium beef brothsalt & pepper, to taste
Directions
1. Bring a medium pot of lightly salted water to a rolling boil on the stove top & add potatoes. Cook for 8 - 10 minutes or until potatoes are tender.

2. Meanwhile, in a skillet over medium heat, saute beef and garlic in oil until meat is no longer pink, about 7-8 minutes. Remove and keep warm.

3. In the same skillet, saute green pepper and onion until crisp-tender, about 4 minutes. Return beef to the pan. Add potatoes and pepper; heat through.

4. In a small saucepan, combine cornstarch and broth until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Drizzle over meat mixture; toss to coat. Serve immediately.
