Crustless Smoked Salmon Quiche

Ingredients
12 oz smoked salmon1 chopped onion1 chopped red bell pepper2 cups sliced mushrooms4 minced cloves of garlic1 TBS olive oil7 large eggs3/4 cup dry skim milk powder3/4 cup water1/4 cup grated parmesan cheesefresh ground pepper3 TBS fresh chopped chives
Directions
Saute the onion, pepper, mushrooms and garlic in olive oil about 6 minutes. Set aside and let cool. Break up the smoked salmon into pieces. Beat eggs with skim milk powder, and water. Mix eggs, cooled vegetables, parmesan, pepper and chives. Pour into pam sprayed baking dish. I used a 10 in glass pie plate. Bake at 350 for about 40 minutes.
