Garlic Mashed Cauliflower

1 head of cauliflower (chopped)2 Tbsp garlic powder2 Tbsp REAL BUTTER2-3 minced cloves of garlic4-5 Tbsp of chopped fresh chivesSalt & Pepper to taste
Chop cauliflower into florets no bigger than 1 inch
Place florets into large sauce pan and add enough water that the florets are submerged.
Add garlic POWDER to the water and bring to a boil
Boil cauliflower for about 10-15 minutes or until tender
While cauliflower boils, saute' minced garlic in a small pan.
When cauliflower is tender, drain completely and add to food processor with butter and sautéed garlic.
Process until smooth.
Salt and Pepper to taste, garnish with chives.
Serving Size: makes about 10, one cup servings
