Sweet Millet Congee

Ingredients
1 cup Millet5 cups Water1 cup peeled and diced Sweet Potato2 tsp minced fresh Ginger1 tsp ground Cinnamon1 tablespoon Blackstrap Molasses1 cup diced Apple1/4 cup Honey6 slices Bacon, cooked and crumbled
Directions
Rinse and drain millet. Place milled, water, sweet potato, ginger, cinnamon and brown sugar in a deep pot. Bring to boul. Reduce heat and simmer, stiring often until water is absorbed, about 1 hour. Remove from heat. Add apple, honey and bacon.

Slow cooker method: Reduce water by 1 cup and cook on high for 2-21/2 hours.

Serving Size: Makes 6 1/2 cup servings.
