Whole Wheat Oatmeal Banana Muffins

skim milk 1coats 1cwhole wheat flour 1cbrown sugar .5cbanana mashed .5cegg whites 2baking power 1tspbaking soda .5tspsalt .5tspwheat germ 2Tbsvital wheat gluten 4tspground flax 2Tbscinnamon 1tspsugar 1tsp
Soak oats in milk until soft. Add wet ingredients. Mix dry ingredients with brown sugar in a bowl. Add the two together and mix just untl combined. Fold in blueberries (best if frozen). Put into 12 greased (with cooking spay) muffin tins. Sprinkle the top of each muffin with cinnamon and sugar. Makes 12 muffins.
