Ingredients:Eggplant, fresh, 3 cup, cubes Spinach, frozen, 1 package (10 oz) yields *fresh onion, 1 cup *Tomato PLUM 1 Whole, 1 serving Turmeric, ground, 1 tsp *Ground Cayanne Pepper, 0.5 tsp *Cumin Seed, Ground (1Tbsp), 1 tbsp *ground corriander, 1 tbsp Olive Oil, 1 1tsp *Cumin seed, 1 tsp *asafoetida (hing), 0.25 tsp Ginger Root, 2 tsp Garlic, 3 clove *Salt, Sifto Table Salt, .25 tsp Granulated Sugar, 1 tsp
Heat oil in a pan add cumin seeds,when brown add
shreded onions, ginger and garlic paste. When Onions are little brown add diced eggplant - turmeric powder, Red chilly powder, cumin powder, coriander powder, salt add little bit of water and let it cook till tender. Take frozen spinach and cook it in microwave for 6 min. when eggplant gets are tender (cooked) add diced tomatoes and cooked spinach from microwave and let it simmer for about 5 to 7 mins. If needed and sugar or jaggary.
