Extra Lean Turkey and Veggie Lasagna

Ingredients
2 lb. Extra Lean Ground Turkey 3 cups Spaghetti Sauce3 cups Ricotta Cheese2 Cups Shredded Mozzarella (divided)1/2 cup Grated Parmesan 1 1/2 cup Water 2 Eggs1 pkg. Ronzoni Healthy Harvest Lasagna, uncooked 1 cup chopped Zucchini1 cup chopped Yellow Squash 1 cup chopped Red Onion1 cup chopped Bell Pepper
Directions
Heat oven to 350. In large saucepan brown meat over medium-high heat; drain. Add spaghetti sauce and water; simmer about 10 minutes. In large saucepan saute zucchini, pepper, squash, and onion until tender. In large bowl mix together ricotta cheese, one-half mozzarella cheese, Parmesan, and eggs. Pour 1 cup of sauce in bottom of 13x9 baking dish. Arrange 3 uncooked lasgana noodles over sauce, cover with 1 cup of sauce. Spread one-half cheese filling over sauce followed by one-half of sauteed vegetables. Repeat layer of lasagna, sauce, then cheese filling, vegetables . Top with remaining noodles and sauce; sprinkle with mozzarella cheese. Cover with foil and bake for 45 minutes. Remove foil; bake an additional 10 minutes.
