Lower Carb Seafood Enchiladas

Ingredients
1 T chopped onion1 tsp butter2 1/2 oz crab meat1 1/5 oz shrimp chopped2 1/2 oz colby cheese1 8 inch Tumaro's Multi-grain wrap1/3 c half and half3 T sour cream1 1/2 T melted butter1 med green onion, chopped1/8 tsp garlic salt
Directions
1.Preheat oven to 350 degrees F (175 degrees C).

2.In a large skillet, saute onions in 1 tsp butter until transparent. Stir in crabmeat and shrimp. Shred the cheese and mix half of it into the seafood. Place the mixture into the tortilla. Roll up around the mixture and place in a small baking dish.

3.In a saucepan over medium-low heat, combine half-and-half, sour cream, 1 1/2 T butter, green onion and garlic salt. Stir until the mixture is lukewarm and blended. Pour sauce over the enchiladas, and sprinkle with remaining cheese.
4.Bake in preheated oven for 30 minutes.


Serving Size: Makes a single serving of two enchiladas
