Mexican-style stuffed eggs

Ingredients
8 eggs1/2 cup finely chopped tomato1 T Kosher salt 1 T + 1 t minced Jalapeno, divided1 T+ 1 t lime juice, divided3 T minced white onion1 T chopped fresh cilantro1 HAAS avocado (the pebbly looking skin)1 T Mayo
Directions
Toss tomato with salt in colander, drain 10 minutes, then combine with:

1tsp Jalapeno
2tsp lime juice
1 T onion
1 T cilantro

Set aside.

Combine 6 yolks with avocado, mayonnaise & remaining lime juice. Mash with a fork stir in remaining onion and jalapeno. Add salt and pepper to taste. Fill whites of the egg. Top with the tomato onion salsa mixture. Enjoy!
