Weezie's Cheesy Fajita Veggie Egg Casserole

Oil spray (I used Kroger brand.)1 1/2 c liquid egg substitute (I used Kroger brand; equivalent of 6 eggs.)1/4 c almond flour1 t baking powder1/8 t salt1/8 t pepper1 c milk (I used 1%.)1 c ricotta cheese (I used part-skim.)1 c 2% Mexican-blend cheese, split into 3/4 c and 1/4 c (I used Kraft.)3/4 c chopped fresh green pepper, red pepper, and onion (I used approximately 1/4 c each and I also used pre-cut veges to make the prep go even faster.)1/2 t chile powder (optional, for topping - You could also use paprika.)
Makes 8 large servings.
1. Spray 8 X 8 pan with oil spray.
2. MIx all ingredients, reserving 1/4 c cheese and chile powder for topping.
3. Pour mixture into pan.
4. Bake for 20 minutes at 350 degrees F.
5. Sprinkle remaining cheese on casserole. Bake for 10 more minutes or until cake tester inserted comes out clean.
6. If desired, garnish with your choice of jalapeños, sour cream, salsa, tomatoes, and/or avocados.
