Denise's Quinoa and Turkey Sausage Stuffed Peppers

8 bell peppers (any color)1 tube Jennie O bulk sausage1.5 cups quinoa3 cups water1 carrot cut into matchstick strips1/4 red onionshitake mushrooms6 slices Lite Provolone2 jars Trader Joes Rustico Sauce
Add quinoa and water to pot. Bring to a boil and simmer until all water is absorbed.
Brown sausage. Add sliced shitake, carrot and onion and cook til softened.
Combine with Quinoa.
Cut tops off of peppers and clean. Stuff peppers with quinoa. Top with sauce and cheese. Bake at 350 until cheese has melted and peppers are hot (about 1/2 hour).
