Zucchini Banana Oatmeal Muffins

Ingredients
1c Greek Yogurt1/2c Almond Milk1/4c canola oil1c old-fashioned oats2 large eggs2 tsp vanilla3/4c flour1/2tsp salt1.5tsp cinnamon1/2tsp nutmeg1tsp baking soda1/5 tsp baking powder1/4c flaxseed1 Zucchini1 ripe Banana1/2c chopped walnuts
Directions
Mix together yogurt, almond milk, oil, and oatmeal. Let set aside for 5-10 minutes for the oatmeal to get soft.

Meanwhile, mash the banana and grate the zucchini. Mix the eggs and vanilla into the wet ingredients, then add the dry ingredients. Add the zucchini, banana, and walnut. More flour may need to be added depending on the moisture level of your zucchini.

Fill muffin liners and bake at 350 for 15-20 minutes.
