Susan's Chewy Granola Bars

Ingredients
4 cups Rice Krispies (can substitute some or all with Cheerios or crushed, unsweetened corn flakes)3 cups oats, instant and/or old fashioned1/2 cup pecans (or other nuts)1/2 craisins (or other dried fruit)1/2 cup honey1 cup brown sugar1/2 cup corn syrup (or honey or maple syrup)1/2 cup peanut butter (or other nut or seed butter)1/2 cup coconut oil1 tsp almond flavoring (or other such as vanilla)salt
Directions
Mix cereal, oats, nuts, and dried fuit in a bowl. You may want to cut up fruit into smaller bits first.

On stove, mix honey, brown sugar, corn syrup and coconut oil over medium heat. Stir continuously. Let it boil for about 30 seconds before taking it off the heat. (boiling should look kind of foamy.) Stir in peanut butter and almond flavoring.

Pour into dry ingredients and mix. Dump onto cookie sheet and spread out to cover entire sheet. Press down with oiled fingers or bottom of a cup. Sprinkle with a small amount of salt (or more if you like salty granola bars). Once cooled, remove from cookie sheet and cut into bars. I make 35 by cutting 5 rows and cutting each row into 7 bars.

Serving Size: Makes about 35 granola bars (1.5 x 3 inches each)
