4 large eggs3 large eggwhites1.5 c. diced mushrooms.5 c shredded colby jack cheese.5 c chopped sweet bell peppers1 c chopped kalenonstick spray
1. Dice mushrooms, onions, and kale.
2. Whip egg whites and eggs together.
3. Mix the eggs, cheese and veggies together and divide evenly in a muffin tin sprayed with nonstick spray
4. Bake at 400 for approx. 25 min
